Biryani, India’s most well-loved Indian rice dish that consists of rice and meat with a robust flavour of spices, was said to originate in Persia and was brought to India by the Mughals. The name of the dish was derived from the Persian word biryan, which means “fried before cooking”. According to legend, the wife of Emperor Shah Jahan visited the army barracks to find the Mughal soldiers looking undernourished. She then asked the chefs to prepare a dish with rice and meat for the soldiers… and the biryani was born.
