Cassava, also called tapioca or kappa, is a staple root across Kerala, Africa and South America, and frozen is by far the easiest way to buy it.
Already peeled and cut, which is the tedious part and the part where you need to know what you are doing.
Boil it in salted water until tender. In Kerala it is mashed with grated coconut and green chilli and served with fish curry, which is one of the great pairings. It also fries into chips.
