Bolst’s have been making pickles and pastes in Bangalore since 1938, and their lime pickle is one of the jars that built the name. Sour, salty and spiced without going overboard.
It sits between the northern and southern styles, hotter than a Gujarati pickle and gentler than an Andhra one.
Serve it with dal and rice, with curd rice, alongside paratha, or with a plain omelette. A teaspoon is a serving and the jar will last you months.
In the pickles aisle at Curry Corner, North Melbourne.
