Rasmalai is the gentler end of Indian sweets. Flattened discs of soft paneer sitting in sweetened, thickened milk scented with cardamom and often saffron, served cold rather than warm.
It is lighter than it sounds and disappears faster than you plan for.
Nanak’s version is ready to chill and serve. Spoon a couple into a bowl with plenty of the milk, top with slivered pistachio if you have some, and serve straight from the fridge. It is the right dessert after a heavy, spiced meal when nobody wants anything fried.
