Ratlami sev comes from Ratlam in Madhya Pradesh and it is not the same thing as ordinary sev. Ajwain and clove go into the dough, which gives it a sharp, almost medicinal edge that people either love or do not.

Eat it with tea, scatter it over chaat, or serve it alongside a drink where its bite does more work than plain sev would. It is one of the more distinctive things in the namkeen range.
