Shahi paneer is the restaurant dish, the rich one with cream and cashew in a pale golden gravy rather than a red tomato base.
Shahi means royal, and the blend is built accordingly, leaning on cardamom and mild aromatics rather than chilli.
Fry the masala with onion and cashew paste, add cream or milk, then the paneer at the very end so it stays soft. Serve with naan. It is the dish to cook when you want something that tastes expensive.
