Rajgira is amaranth, and like singhara it belongs to the fasting shelf. Grains are avoided during vrat, and amaranth is technically a seed, so it is permitted.
Naturally gluten free, high in protein, and nutty in flavour.
Make rajgira puri and paratha during Navratri, or use it for rajgira ladoo with jaggery. Outside fasting it works as a gluten free flour in pancakes and flatbreads, usually mixed with something else for structure.
