Sella is parboiled basmati, which is a genuinely different product rather than a grade. The rice is steamed in the husk before milling, and that changes how it cooks.
It is almost impossible to overcook. The grains stay separate and firm no matter what you do to them.
This is why caterers and biryani cooks use it. If you are making biryani for twenty people and cannot stand over the pot, sella is the safe choice. Rinse, soak longer than white basmati, then cook.
